Roasted Garlic Butter

This recipe is easy and supremely delicious. I realize I may be scaring friends off with my garlic breath but some things just can’t be helped. Garlic is one of my favorite flavors and I try to put it on everything I can, including this garlicy spread. Spreads are so easy and they fancy up a dish like nobody’s business. This one is simple.

Here’s how:

Cut the  top quarter of a bulb of garlic off and dispose. Place the bottom of the bulb in a square of tin foil. Drizzle with extra virgin oil, salt and pepper. Wrap tin foil like a pouch.

In a 450° toaster oven or oven place your garlic pouch and roast for 15 – 20 minutes depending on your oven. Remove and cool.

Combine two sticks of room temp. butter with salt, pepper, lemon zest and red chili flakes. Squeeze in the garlic from the bulb in your little pouch. Add  2 teaspoons extra virgin olive oil.

Mix well and refrigerate for thirty minutes. Use often and enjoy repeatedly!

Note: This Mix will hold in your refrigerator for three weeks. Can be frozen for 3-4 months.
