Roasted Green Beans and Cremini Mushrooms

Frozen vegetables are such a convenience to have on hand as staples in the freezer, but I don’t enjoy the taste or texture of microwaved or steamed frozen vegetables. I got inspired by my friend Mary when she roasted green beans in one of her posts. Up to that point I had roasted tons of vegetable that landed on our dinner table but her post made me want to try it with frozen. I will admit not all frozen veggies work with this method but green beans were definitely a hit. I have learned that the oven can leave them with out sheen so I now drizzle on the oil at after the roasting. I really love the fresh kick the raw oil gives this side. Enjoy!

roasted green beans w/ cremini mushrooms

Ingredients

4-6 cups french green beans, frozen

1 pint cremini mushrooms, sliced

2 garlic cloves, pressed or fine minced

1 lemon sliced

corse sea salt

fresh ground black pepper

1/2 teaspoon chili flakes

2 tablespoons olive oil

Directions

Preheat oven to 400° F.

On a sheet pan pour out a single layer of frozen green beans and sliced cremini mushrooms (you could substitute button mushrooms). Press two cloves of garlic (fine mince if you don’t own a press). season with salt, pepper and chili flakes. place lemon slices over the top. Bake for 15 – 30 minutes (depending on your oven).

Toss with fresh olive oil and serve.

    Oooh, Kara! I love this. I’ve never thought about roasting mushrooms, but guess what I’ll be doing today?! This looks fantastic. I was planning to make a mushroom soup, but I think I’ll roast them first now.  Thanks!
