Blueberry Balsamic Soda
Here’s another creation inspired by my fancy Soda Stream. I originally bought it to use for my gluten free breads, but I have been enjoying so many delicious beverages from it. I get excited when the girls or I come up with a flavor combination that sound intriguing. I get even happier when it works!
I have mentioned before that, although I try to take in my required amount of water each day, I do love me a little variety.
Now that I don’t have a crazy sweet tooth anymore, commercial sodas are just to sweet for me. I enjoy making these little syrups and keeping them in the fridge to enjoy on a whim. This one was perfect in sweetness for me yet my daughters also loved it (and they still love a Dr. Pepper when they get their hands on one).
Whip yourself up one of these, grab a great (or not so great) book and enjoy some quiet time.. or just serve with dinner, either way is delightful.
2 cups fresh blueberries
3 tablespoons brown sugar, maple syrup is great too
1/4 cup water
1 tablespoon good balsamic vinegar
In a small saucepan set on a medium to low heat, and add blueberries, sugar and water. Stir slowly, crushing the berries a little with your whisk.
Once the liquid is starting to thicken, add balsamic vinegar. Continue to stir. Don’t leave unattended and watch your heat or the sugar will burn.
As the blue berries break down and the mixture starts to look more like a syrup, turn heat off but continue to stir to allow it to reduce a little more while the pan is still hot. Cover it, allow to cool. Pass through a fine seive. Now you have blueberry balsamic syrup!
In a glass, place desired amount of ice. Pour up to a tablespoon of blueberry syrup into the glass. Now top with mineral water, or soda water. I use my SodaStream for this. Enjoy!
