Raspberry Lemon Smoothie

Once I warmed up to smoothies as a food I was pretty much “all in”. I think they are a terrific way to combine a large quantity of ingredients into one cup. I have found that smoothies are also a great way to incorporate ingredients that we SHOULD be eating and rarely would.

Raspberries are terrific for women’s health. Beets are an amazing blood builder for those with iron issues (see What Have You Done For Me Lately). Lemon is a yummy detoxify-er (yes, I know I make up words on this blog). The flavors work well together in a surprising way. As well as being light and refreshing during the summer months.

Either way, it’s a very tasty way to get a bulk of vitamins and minerals that ACTUALLY taste GOOD. Enjoy your health!

lemon raspberry beet smoothie


Serves 4

2 cups fresh raspberries, (frozen can be substituted)

1 large beet, (or 2 small)

2 tablespoons chia seeds

2 cups coconut milk

1 cup ice


Add all ingredients into a blender and mix on high to combine. Serve immediately.
