Gluten Free Grown Up Grilled Cheese

Now that winter is upon us, soup season is in high gear. Yet my favorite part of the soup meal is the grilled cheese that it gets dipped into.

Now that my daughters are grown, I am able to kick things up a bit and play with ingredients that would be more pleasing to an adult pallet. This particular sandwich with extra sharp cheddar, tangy goat cheese and spicy Sriracha hot sauce is incredibly delicious.

With the addition of  mixed greens, you get the whole: soup, salad sandwich experience!  So with just the addition of a favorite wintertime soup, you have a complete, satisfying, belly warming meal that requires less than thirty minutes to prepare and very little babysitting because you are using the oven to do your cooking for you. Enjoy!

cheddar goat cheese and bitter greens

Ingredients

2 ounces goat cheese

3 tablespoons garlic butter

1/2 cup extra sharp cheddar cheese, grated

1/2 teaspoon Sriracha sauce

4 – 6 slices of gluten free sandwich bread

salt and pepper to taste

Directions

Preheat oven to 425° F.

Mix the Sriracha, cheddar cheese and goat cheese and salt and pepper together. Set aside. Spread garlic butter on the outer sides of each piece of bread. Lay each piece of bread butter side down on a sheet pan. Spread the Sriracha cheddar mixture on top of each piece of bread.

Bake at 425° F, for 6-8 minutes. Bake for 3-4 more minutes or until cheese is melted. The cooking time may vary depending on how toasted you like the bread on your grilled cheese sandwiches. The first time you do this, you might check on it a few times to be sure it does not get more crisp than you like them to be. When cheese is melted, remove from oven add mixed greens and a bit more Sriracha, if desired. Close sandwiches. Serve and enjoy!
