Green Energy Smoothie
I have mentioned in previous posts that I wasn’t a fan of smoothies. Well they’re growing on me. Honestly, I think my biggest issue with them is my laziness to clean my Vit-A-Mix afterward.
But last year I began juicing so I could get a little more bang for my nutrition buck. BUT…cleaning out a juicer!!!! Give me a blender any day!
my logic had been: if I’m chugging this thing down who really cares if It’s juiced for a million hours (ok, so I’m exaggerating) or wizzed through the blender in one second (yea, still exaggerating). But then…
I discovered that there are some good benefits to smoothy-ing (new word, I know) over juicing. One big one for me was the additional fiber; when you juice it’s all removed, so with that info I was 2 – 1…smoothie for the win!
I’m not sure why everything has to be a competition with me, but either way this smoothie is an awesome boost in the afternoon when you need that second wind. But feel free to enjoy it in the morning as a kick start to your day.
Yield: 2 smoothies
1 apple, cut into quarters seed removed
1 lemon, peeled to remove pith
2 cups fresh spinach
2 stalks celery
2 inches of fresh ginger, cut into quarters
Place all ingredients in the picture of a strong blender (you could use a “Magic Bullet” type product also). Pour enough coconut milk to cover ingredients.
Process until smooth. Pour into a glass and enjoy!
