Gluten Free Orange Chicken (Gluten Free)

Suddenly, I have been overwhelmed with a desire to make gluten free asian cuisine, (I blame it on the anime), and I have not regretted it. This orange chicken was super easy, and the best part, frying is optional! Now don’t get me wrong, I love throwing food in a good pan full of hot oil, but sometimes, I just don’t want the hassle. So if you opt not to fry, you are not alone. But either way you choose, it will be delicious.

1/2 cup gf* chicken broth

1/4 cup of orange juice

1/3 cup honey

2 tablespoons soy sauce

1 1/2 teaspoons orange zest

1 tablespoon apple cider vinegar

1 tablespoon sriracha (more or less, depending on your preference)

3 to 4 chicken breasts, cut into bite sized pieces

3 eggs, beaten

3/4 cup cornstarch

3 tablespoons vegetable oil

Preheat the oven to 325º F.

Combine all the wet ingredients in a bowl, (the chicken broth, orange juice, honey, soy sauce, orange zest, cider vinegar and sriracha). Now would be the time for you to taste this and customize it. If it’s too hot, too sweet, too vinegary, adjust the ingredients according to your tastebuds.

Heat a pan with 3 tablespoons of oil to medium high heat. After you’ve cut your chicken, toss it in the remaining cornstarch, and then the eggs. Then put it into the pan and cook until the chicken is browned. Put the chicken into a baking dish, cover with the sauce and bake for 50 minutes, stirring about every 15 minutes. Done!
