Microwave Salted Caramel Sauce (Gluten Free)
I was scrolling my news feed the other day and my evil friend Mary (only kidding, kinda, wait till you taste this stuff) had shared one of her blogger friends’s recipes for quick salted caramel sauce. Well of course I HAD to see if it really worked AND if it was really good! YES and YES! So just to ruin all of your lives as it ruined mine… in under five minutes you can have a yummy carmel sauce.
I will say that I now know for sure why caramel sauce is supposed to be this lengthy involved highly dangerous process conducted upon our stove tops. First, while this caramel is GOOD nothing quite compares to those French methods for flavor. And second…so we don’t make it all the time! It is just wrong that you can be swimming in caramel in less than five minutes.
It is so good drizzled over brownies, or apples, or a sock! You just have to try this!
Recipe adapted from Cookies and Cups
1/2 cup salted butter, melted
1 cup sugar, brown sugar can be substituted
2 tablespoons molasses, eliminate if using brown sugar
1 cup heavy cream
1 teaspoon good vanilla
1 tsp sea salt, optional
In a large microwave safe glass bowl (I used an 8 cup) melt your butter. Then add molasses, sugar (or substitute brown sugar) and heavy cream. Whisk until all ingredients smooth out and look like thin gritty caramel..
Place in the microwave on high for two minutes. Remove and whisk again. Place in the microwave a second time for an additional two minutes. The mixture will be a bit thicker at this point but not VERY thick.
Stir in vanilla and sea salt. Allow to cool off a bit so it isn’t burning hot. The more it cools the thicker it will become. You can store in a jar in your refrigerator for about a week and just reheat it a bit if its too thick. It is best served warm.
