Pomegranate and Squash Fall Salad (Gluten Free)

What with all the heavy meals that are going around during this season, sometimes we find ourselves in want of something a little lighter, like this super flavorful fall salad!

I am no lover of leaves for the sake of loving leaves. I like what goes on top. And I love everything that is on this salad. This perfectly gathers everything that’s in season right now in one flavorful and health packed bowl. It’s good on the mouth and the waistline 🙂

Fall Salad

Ingredients

1 bag of spring mix

3 cups roasted butternut squash

3 cups pecans

1 cup pomegranate seeds

parmesan cheese

1/2 cup balsamic

1/2 cup olive oil

Directions

Throw half the greens in a large serving bowl. Sprinkle half the squash, pecans and pomegranate seeds over the leaves. Put the rest of the leaves on top and then spread the rest of the toppings. Top off the salad by putting some parmesan over the leaves. We do this by taking a potato peeler to the cheese and shaving off a couple sheets.

Lastly, mix together the balsamic and olive oil with a whisk and pour it over the salad. That’s it! Super easy. Super healthy. Super delicious 🙂
