Strawberry Pistachio Salad with Gruyere Cheese Laces (Gluten Free)

This is a prime example of one of the salads that has completely turned me around to the idea of eating leaves as a meal. I mean, there’s nothing about this salad that I don’t love the idea of: strawberries, pistachios, cheese laces… eating. It all sounds good to me.

Strawberry Pistachio Salad

It pairs wonderfully with this dressing recipe, courtesy of the Kompromised Kitchen, (shameless plug). It’s wonderful as a quick lunch or dinner, and goes great with some roasted chicken, you know, if you’re into that kind of thing.

Ingredients

1/2 pound of lettuce or mixed greens

1 pound strawberries

1/2-3/4 cup pistachios

1 1/2 cups grated gruyere

Directions

Preheat oven to 350 degrees

Rinse and chop your lettuce, (if necessary), and put half of it into a bowl. Lop the tops off the strawberries and slice them. Sprinkle half the strawberries over the lettuce and do the same with half the pistachios. Repeat that using the rest of the lettuce, strawberries and pistachios.

FYI, this half and half thing is so the ingredients get evenly distributed and don’t all sink to the bottom of the bowl like they would of you tossed it.

Onto cheese lace. Line a baking sheet with a Silpat and spread the grated cheese over it evenly. Bake for 10-15 minutes. Keep a close eye on it because cheese laces have a heartbreaking way of burning at a second’s notice. Let that cool, break it and sprinkle over your salad.
